Stew Peas

Stew peas is a very popular Jamaican dish. For those of you who love this dish but is not sure how to prepare it, just follow the following recipe and you can’t go wrong.  For those who don’t eat pork or may be on a low salt diet, this recipe uses an alternative to salted me.

1 lb chicken parts (cut up)

1 pt. red peas

2 stalk scallion

sprig thyme

1 pk. coconut milk

1 cup flour

2 cloves garlic

1 whole green scotch bonnet pepper

1 tsp chicken seasoning

1 tbsp all purpose seasoning

salt  if needed

Method

1      To lessen cook time put peas to soak overnight to soften

2      Season chicken with chicken seasoning and allow to marinate for at least half-an-hour

3      Put peas in a large pot with enough water to cover, add garlic and allow peas to cook until it is soft

4      In frying pan brown chicken to a deep brown colour

5      When peas is cooked add coconut milk, chicken, scallion, thyme and scotch bonnet pepper

6      Add water to flour to make a stiff dough.  Pinch off small pieces and roll in the palm of your hand to make long thin

dumplings  (spinners).  Add these to stew.

7      Add all purpose seasoning and salt if  necessary.  Allow to simmer for another 30-45 more minutes until stew is thick

Stew can be served hot with plain steamed rice and ripe fried plantain
